Quick Pesto Pizza

  • 6 mini pitta breads, split in half and lightly toasted
  • Pesto alla Genovese, Pesto Rosso or Chilli Pesto
  • 125 g ball of mozzarella, torn into pieces
  • Cherry tomatoes cut into quarters
  • Red and yellow peppers, finely diced
  • Anchovies
  • Stoned olives, halved
  • Italian ham, torn into pieces
  • Slices of salami


Preheat the oven 220°C/425°F/gas 7.

Spread each pitta half with a heaped teaspoon of pesto. Sprinkle with your choice of toppings and scatter with mozzarella. Cook in the oven for 5 to 7 minutes, until the cheese has melted and is starting to bubble.
