Quick Pesto Pizza

Quick Pesto Pizza 20 minutes - 12 servings


6 mini pitta breads, split in half and lightly toasted
Pesto alla Genovese, Pesto Rosso or Chilli Pesto
125 g ball of mozzarella, torn into pieces
Cherry tomatoes cut into quarters
Red and yellow peppers, finely diced
Stoned olives, halved
Italian ham, torn into pieces
Slices of salami


Preheat the oven 220°C/425°F/gas 7.

Spread each pitta half with a heaped teaspoon of pesto. Sprinkle with your choice of toppings and scatter with mozzarella. Cook in the oven for 5 to 7 minutes, until the cheese has melted and is starting to bubble.
