Prep Work For Tomato Soup:

  1. Roughly chop onion, garlic, ginger, tomatoes, and carrots before starting the soup.

How To Make Fresh Tomato Soup:

  1. Heat oil in a saucepan or a heavy-bottom pan.
  2. Add onion, and sauté for 2-3 minutes.
  3. Next, add the chopped carrot, bay leaf, chopped garlic, ginger, and sauté for 2–3 minutes.
  4. Add the Sacla Tomato & Roasted Garlic Sauce, and water, and simmer covered for 5 minutes on low-heat.
  5. Once the carrots turn soft, remove the lid. Gently mash the vegetables using the back of the ladle/spoon. Turn off the heat.
  6. Transfer them to a blender and make a smooth puree.
  7. Transfer back into the saucepan. Season to taste, and add coconut milk. Simmer the tomato soup for 3–5 minutes over low heat. If the consistency seems too thick, add a little bit more water, if it’s too runny cook it down for a little bit.
  8. Serve tomato soup with Finn Crisp Crackers, a drizzle of coconut milk, and chopped fresh basil leaves.
