Potato Parmantier


  • 2 large potatoes, boiled
  • 1 jar Saclà Capsicum & Eggplant pasta sauce
  • 2 spoons extra virgin olive oil
  • 1 garlic clove
  • Salt & pepper
  • a handful of fresh salad


Preheat the oven at 200° C. With a fork roughly mash a large boiled potato, season and mix with the Saclà Capsicum & Eggplant pasta sauce. Warm in the microwave. Meanwhile slice the other potato 5 mm thin and lay on an oven baking tray with the garlic clove, drizzle with extra virgin olive oil and season. Cook at 200° C for 10 min or until golden and soft. On plates make towers of alternate layers of potato slices and Saclà Capsicum & eggplant and potato mash mix. Drizzle with extra virgin olive oil and serve warm with fresh salad as side dish.
